Can't go wrong with a Mexican rice bowl!
Time to make – 10 minutes Serves 1
85g tin of Mexican flavored Tuna 125g pot of microwavable brown rice 80g of chickpeas 2 Eggs 50g red diced capsicum 100g of cottage cheese 50g tomato salsa 6 cherry tomatoes - halves
Boil your eggs to desired consistency – I find 7 minutes perfect
Microwave the rice according to the packet instructions
Place the rice, chickpeas, cottage cheese, salsa, tomatoes and diced pepper in a bowl
Add the cooked eggs
