Pesto and Pasta, the perfect quick, simple yet tasty meal
Time to make – 25 minutes Serves 2
Ingredients
2 x 120g chicken breasts
100g of uncooked penne pasta
60g of any pesto
2 large handful of rocket
Method
Preheat the oven to 200C
Season the chicken with salt and pepper and bake the chicken until the juice run clear
Cook the pasta according to packet instructions
Remove the chicken once cooked and shred with a fork
Add it to the drained pasta
Stir in the pesto and heat through
Serve on the bed of rocket
